Jersey-Style Disco Fries
Serves 4-6
“If you grew up in New Jersey, you know these are a late-night diner staple. If you didn’t grow up in New Jersey, you’re welcome… ;)”
Ingredients
- 4 tablespoons butter, divided
- 1 shallot, minced
- 2 cloves garlic, minced
- Salt and pepper
- 3 tablespoons all-purpose flour
- 2 cups chicken stock
- 1 tablespoon Worcestershire sauce
- 1 16-ounce bag frozen steak fries, baked or fried to golden brown
- 2 cups mozzarella, shredded
Directions
- 1Preheat broiler.
- 2In a high-sided skillet or medium saucepan, melt 2 tablespoons butter over medium heat. Add shallot and cook until translucent, about 4-5 minutes. Add garlic and cook for another 1-2 minutes. Season with salt and pepper then add remaining butter and melt. Sprinkle the flour in the pan and whisk until fragrant and light brown, about 2-3 minutes. Whisk in stock and Worcestershire sauce, and continue whisking until there are no lumps. Let the gravy come to a bubble, whisking often, until it is thick enough to coat the back of a spoon, about 5-6 minutes.
- 3Arrange steak fries on a small baking sheet or oven-proof tray. Pour gravy over the top of the fries and top with shredded mozzarella. Place fries under the broiler until mozzarella has melted, about 1 minute.
