Lasagna roll-ups with vodka sauce

Each roll is its own tidy lasagna: ricotta, herbs and mozzarella wrapped in a noodle and baked in a quick vodka sauce.

Ingredients

lasagna noodles, ricotta, mozzarella, parmigiano-reggiano, egg, crushed tomatoes, vodka, shallot, garlic, basil, parsley, oregano, nutmeg, olive oil, salt, pepper

Reheating

Oven at 350F, covered, 25 minutes. Microwave works in a pinch: 2 minutes per roll.
